Our Blueberry Lemon Silk Pie starts with sweet Michigan Rubel blueberries from True Blue Farms in Grand Junction. We top them with a light, creamy lemon filling made from freshly squeezed lemons and whipped cream cheese — smooth, cool, and just tart enough to balance the berries.
The finish: a scalloped whipped cream topping, more fresh blueberries, and a hit of lemon zest.
